Crockpot Cooking - Easy Household Hints and Tips - How to Make Crockpots Easier to Clean

I love my crockpot - it makes dinner for me while I'm busy working during the day. But, sometimes slow cookers can be difficult to clean. There's an easy solution to that!

Simply spray the inside of your crockpot with cooking spray, or my preferred method is to grease the inside with a little olive oil. (I'm not a fan of cooking spray - I prefer to use natural stuff, and extra virgin olive oil is so good for you! You can even get misting bottles for your olive oil, so that it's just as easy to use as vegetable cooking sprays.)

Then, when you're finished eating dinner, cleanup should be far easier!

Saturday, July 14, 2007 For Your Safety - Symptoms of Heat Stroke/Heat Exhaustion

With these dog days of summer upon us, I thought I'd post some helpful tips on preventing heat stroke and heat exhaustion, and symptoms to look for in your family, friends or even yourself to make sure you're safe in this heat.

  • Dehydration is a serious thing in hot weather - don't ever underestimate how important it is to stay hydrated when out in warm weather. We all lose some body fluids every day, from normal activities like perspiring and using the bathroom. Some symptoms of dehydration include: thirst, less frequent urination, dry skin, fatigue, light headedness, dizziness, confusion, dry mouth, and increased heart rate and/or breathing rate
  • To prevent dehydration...drink plenty of fluids all day long, especially (but not only) when you're out in the hot sun. Keep a bottle or glass of water with you all the time. Make sure to take in more fluids than you're losing by perspiration...and don't exercise during the very hottest periods of the day. You'll put yourself at greater risk of dehydration and heat stroke.
  • Heat Stroke is a very serious condition - in fact, it's considered the most serious of all heat related illnesses. It can cause death if left untreated, or allowed to go to an advanced stage. It is caused by long exposure to heat and/or sun, when a person doesn't sweat enough to lower their own body temperature.
  • Symptoms of Heat stroke include (but are not limited to): headache, dizziness, disorientation, sluggishness or fatigue, seizures, hot dry skin that isn't sweaty, high body temperature, rapid heartbeat, hallucinations
  • Symptoms of Heat stroke should never be ignored! Treat the person immediately by getting them indoors out of the blazing heat. Remove as much clothing as possible and treat with cool water all over the patient's body...have the person lie down, and apply ice packs to the groin and armpits. Get professional help as soon as you possibly can.

The hot summer weather seems fun, but keep your family and yourself safe this summer. If you have any health conditions or if you live in a particularly hot area of the country, get advice from health professionals in your area about how to prevent dehydration and heat stroke.

Bleu Cheese Potato Salad Recipe - a Gourmet Potato Salad

Bleu Cheese Potato Salad
Serves 4
Thanks to Dorina for this updated version of everyone's favorite summertime salad - potato salad. This version is also very low in fat compared to the traditional number, and with strongly flavored blue cheese crumbled in, it'll certainly not lack in flavor...

1 ½ pounds round red potatoes—peeled, and cubed (8 cups)
1 teaspoon cider vinegar
¼ cup diced red onion
¼ cup diced celery
2 small green onions, chopped fine
¼ cup low-fat sour cream
2 tablespoons buttermilk
salt and pepper—to taste
1 ounce crumbled blue cheese (1/2 cup)

Place potato in a large pot and cover with water. Bring to a boil and cook potatoes until tender. Drain and place in a large bowl; toss with a little cider vinegar (about a teaspoon) while warm. Add onion, celery, and green onions; toss gently. (The vinegar is an important step: it will help the flavors permeate the potatoes.)

Combine sour cream and next 4 ingredients; stir well. Stir in cheese. Pour over potato mixture; toss gently to coat. Cover and chill overnight.

Ziploc Baggie Fudge Recipe - Great Summertime Fudge (Fun for Kids)

Ziploc Fudge
Thanks go to Jeannie for this fun, heat-free summertime candy project. Wow, does it ever sound good!

1 stick butter or margarine (or 1/2c. peanut butter)
1 tsp vanilla
4 oz. cream cheese
2/3c. unsweetened cocoa powder
1lb. powdered sugar

Cover a paper plate with foil and set aside. (I didn't do this, I just left it in the ziplock.) Place butter (or peanut butter), cream cheese and vanilla in a large Ziplock bag, seal the bag and squish it until the ingredients are combined (about 5 minutes). Add the cocoa and powdered sugar and continue squishing the bag until everything is well mixed (5 - 10 minutes). Empty the bag onto the foil-wrapped plate. ( I left mine in the bag ). Let stand for a few minutes to solidify. Cut into cubes and enjoy!!! Refrigerate leftovers!!

"Spray it all over with oven cleaner. Put it in the oven overnight. All of the gunk should come right off. Use an SOS pad if it doesn't."

For cleaning ANY stainless steel, try Barkeeper's Friend. This stuff comes in either a fine powder or a liquid form, and it cleans up any mess on any type of stainless steel better than anything else you'll ever try!

Recipe Found - Three Different Tried and True Corn Muffin Recipes

Great big thanks to Sue, who always sends in such wonderful recipes when any other reader requests them. Here's an email she sent me, with her three favorite 'tried and true' corn muffin recipes...

Hi Christina:Regarding your request for a corn muffin recipe and favorite dish to serve them with, I alternate the following 3 Southern recipes and I have no special dish that I eat them with. When these muffins come out of the over, I spread honey or butter on them and enjoy their delicious taste. Because I live alone, I will freeze whatever is left over or give them to my kids and their family and my friends.

Recipe #1. CORNY CORN MUFFINS
INGREDIENTS: 1 cup self-rising cornmeal mix, 3/4 cup self-rising flour, 1/2 cup vegetable oil, 1 cup white creamed corn (fresh if possible or frozen), 2 eggs, 1 cup sour cream, 2 tbsp's. sugar.

DIRECTIONS: Preheat oven to 375° and grease a 12-cup muffin tin. (If you like a crispy edge around your muffins, preheat the tin in the oven until the grease is very hot). Combine all ingredients and stir until moistened. Fill the muffin cups with batter and bake for 20 minutes or until golden brown.

YIELDS: 12 muffins.

Recipe #2. CORN MUFFINS
INGREDIENTS: 3/4 cup cornmeal, 1/2 tsp. salt, 3/4 cup boiling water, 1/2 cup milk, 2 eggs beaten, 1 tsp. baking powder, 2 tbsp's. butter melted.

DIRECTIONS: Preheat the oven to 425°F. Sift the cornmeal and salt into a small bowl. Pour in the boiling water and mix well. Add the milk and mix well. Stir in the beaten eggs, baking powder and butter and mix well. Spoon into eight large, nonstick muffin cups. Bake for 20 to 25 minutes or until brown.

YIELDS: 8 servings.

Recipe #3. CORN BREAD or CORN MUFFINS
INGREDIENTS: 2 cups self-rising cornmeal, 1 egg, 1/2 cup buttermilk, 1 tbsp. granulated sugar, 1/4 cup (1/2 stick) butter or margarine softened.DIRECTIONS: Preheat the oven to 350°. In a large mixing bowl, combine the cornmeal, egg, buttermilk, sugar and butter. Mix with whisk
DO NOT BEAT.
FOR CORN BREAD: Pour the batter into a 9 x 12-inch pan coated with shortening or nonstick spray. A prepared iron skillet can be used.
FOR MUFFINS: Pour into 12 to 15 greased or paper-lined muffin cups.
FOR STICKS: Pour into a corn-stick pan coated with shortening or a nonstick spray. Bake for 15 to 18 minutes or until golden brown. Remove from the oven and brush with melted butter. Cut the corn bread into squares OR remove the muffins or sticks from the pan. Serve hot.

MAKES: About 24 servings.

You can get cast iron corn muffin stick pans - that look like miniature cobs of corn. Such a cute way to serve your corn muffins, and as with all cast iron - the stuff lasts FOREVER if you take care of it properly!

Thanks to everyone who responded to the tea survey questions this week! Here are the survey replies I've gotten thus far...


  1. Eunice says: " What a great topic!!
    I love hot tea. I drink hot tea all afternoon and night, so I use a coffee maker to keep water hot. My favorite tea is a Chai that a friend from Oregon sends me. However, I like most any flavor of teas. Stash tea makes a Moroccan Mint that is wonderful. Whenever I'm in the grocery store and I see tea on sale, I have to buy it. Just this past week, Kroger had marked down lots of the Stash tea and I'm stocked up now.
    If I'm drinking iced tea, I add fresh mint."
  2. Irene writes: "Love ice tea brewed with 5 bags/1/2 gallon. 1/2 cup sugar and a big spash of rasberry syrup. YUM."
  3. Jazzy writes: " Good Afternoon all,
    I love having Sweet Razzberry iced tea, with simple syrup. I take razzberry zinger flavored tea bags from Celestrial Seasoning. For a pitcher of tea, put 8 tea bags in a saucepan of water. Bring to a boil for a couple of minutes.Turn off the fire and let steep for about 10 minutes. In the meantime make your simple syrup. Put 1/2 Cup of water in another sauce pan. Add 1 Cup of sugar to pan, bring to a boil and make sure all sugar is melted then set to the side and let cool off. When cooled down add to pitcher. Wring out tea bags in pan and discard bags. Add tea to pitcher, add enough water to fill pitcher. It makes 2 quarts. It is good stuff."
  4. Julie from BC, Canada writes: "Hi there! I drink my tea (earl grey/lemontime or just about any flavour) rather on the weak side along with some homebaked cookies, preferably warm chocolate chip :)"

And as for me...I love a really good strong cup of Tetley tea (my absolute favorite) or sometimes English Breakfast tea (Twinings is my favorite.) I brew it really strong, and then add a little bit of milk and honey. Delish! I love herbal teas too, such as Peppermint or Chamomile, and then brew them strong again and add a little honey or lemon...really delicious iced too on hot summer days like this one!

Do any of you have a great, tender corn muffin recipe to share? And if so...what is your favorite dish to serve corn muffins with? I know I love a hot steamy corn muffin with a bowl of spicy chili.

Today's Reader's Question is: How to clean a stainless steel grill?

"My husband just got a new stain less steel grill. SO of course he sprayed the pam grill spray on the cooking surface. Now the question is how do we clean this mess?"

P.S. For Sandy and everyone else -- PAM may seem like a great way to keep your grill and bbq stick-free and easy to clean, but it actually creates a sticky coating on the surface of the grill and any cookware you use it on. It's much better to use a spray bottle with real olive oil inside - light olive oil works best for this application, as it's thinner in consistency and won't clog up the spray bottle. You can use either a regular spray bottle, or purchase one of the aerosol-type bottles at your favorite kitchen shop. (My favorite is by Cuisinart, is stainless steel and allows you to pump air into the bottle which creates pressure for the oil to come out in a nice, steady spray!)

Recipe Lost and Found: Recipe Found - Whole Wheat Fruitcake Cookies

FROM: SUE B.

DELICIOUS WHOLE WHEAT FRUITCAKE COOKIES
Prep. Time: 20 minutes
Cook Time: 15 minutes
INGREDIENTS: 1 cup packed brown sugar, 1 cup water, 1 cup raisins, 2 tbsp's. butter, 1/2 tsp. salt, 1 1/2 cups whole wheat flour, 3/4 tsp. baking soda, 1/2 tsp. ground ginger, 1 tsp. ground cinnamon, 1/2 cup dates pitted and chopped, 1/2 cup candied mixed fruit peel and chopped, 1/2 cup chopped nuts, 1/2 cup chopped dried mixed fruit.

DIRECTIONS: Preheat oven to 350°F. Grease one 5 x 9-inch loaf pan. In a saucepan over medium heat, cook together the sugar, water, raisins, butter and salt. Remove from heat and allow to cool. Sift together the flour, soda, ginger and cinnamon. Stir into the cooled cooked mixture. Add the chopped dates, mixed peels, nuts and dried fruit. Pour into loaf pan and bake for 1 hour OR drop by the teaspoon on a cookie sheet and bake for 15 minutes.YIELDS: 18 servings.

Recipe Found for Spinach Salad with Brown Sugar Salad Dressing

Here's an email I received from Laura:
Here's a recipe request for Tuesday, June 26, submitted by Netta: "I've been trying to find a Spinach Salad recipe that my Dad use to fix. The dressing consisted of brown sugar and oil, I think. The salad has spinach, red onion, and . . . ? My Dad is long gone and I can't seem to find the recipe. Please help."
I found this recipe I hope it helps Netta:

Spinach Salad
Easy and delicious especially the dressing!
Ingredients
1 bunch Fresh torn spinach
2 cups Fresh bean sprouts
1 8-oz Can sliced water chestnuts, drained
4 Hard-cooked eggs, chopped
6 Bacon strips, cooked and crumbled
1 Small onion, thinly sliced

Dressing
1/2 cup (packed) brown sugar
1/2 cup Vegetable oil
1/3 cup Vinegar
1/3 cup Ketchup
1 tbsp. Worcestershire sauce

Preparation
In a large bowl, combine spinach, bean sprouts, water chestnuts, eggs, bacon, and onion.
In a bottle or jar, combine all dressing ingredients. Cover and shake well to mix.
Just before serving, pour dressing over salad and toss.

Whole Wheat Cookies Recipes - Whole Wheat Chocolate Chip Cookies and More

Dorina found these four terrific sounding whole wheat cookies recipes. One for whole wheat chocolate chip cookies, one for whole wheat oatmeal cookies, one for whole wheat sugar cookies and finally -- one for whole wheat apple cookies. :) I'll be trying at least one of these, and will post any results! Big thanks to Dorina (one of our major 'recipe finders') for these great recipes.


WHOLE - WHEAT CHOCOLATE CHIP COOKIES Recipe
1 c. butter
1/4 c. peanut butter
1 c. honey
2 eggs
1 1/2 c. whole-wheat flour
1 tsp. soda
1/2 tsp. salt
2 c. rolled oats
1 to 2 c. chocolate chips
1 c. nuts, chopped

Cream together first 4 ingredients. Add next 6 ingredients and mix well. Add enough flour for stiff dough. Drop by teaspoon on cookie sheet. Bake at 375 degrees for 10 minutes

~~~~WHOLE WHEAT OATMEAL COOKIES Recipe
1 c. whole wheat flour
1 1/4 c. quick oats
1/2 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. butter
1 c. sugar
1 egg, beaten
1/4 c. milk
1/2 c. raisins
1/2 c. nuts
Combine dry ingredients. Cream sugar and butter. Add eggs and milk. Combine all ingredients. Add raisins and nuts. Drop by teaspoon on cookie sheet. Bake 10 to 12 minutes at 350 degrees.

~~~~WHOLE WHEAT SUGAR COOKIES Recipe
1 c. sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
1/2 tsp. nutmeg
1/2 c. butter, softened
2 tbsp. milk
1 tbsp. grated orange peel
1 tsp. vanilla
1 egg
2 c. whole wheat flour
2 tbsp. sugar
1/2 tsp. cinnamon
Preheat oven to 375 degrees. In large bowl combine first 10 ingredients; blend well. (Lightly spoon flour into measuring cup; level off.) Stir in flour. Combine sugar and cinnamon.Shape dough into 1-inch balls; roll in cinnamon-sugar mixture. Place on ungreased cookie sheets, 2 inches apart; flatten slightly. Bake 8- 10 minutes until light golden brown. (Cookies will be soft in center.) Yield 2-3 dozen cookies.

~~~~WHOLE WHEAT APPLE COOKIES Recipe
1/2 c. butter
2/3 c. honey
1 tbsp. molasses
1 egg
1/4 c. apple juice
1 c. apples, chopped
2 1/2 c. whole wheat flour
1/2 tsp. salt
1 1/4 tsp. baking soda
1/2 tsp. ground cloves
1 tsp. cinnamon
1 c. raisins
1 c. pecans, chopped
Preheat oven to 325 degrees. Cream together butter, honey and molasses. Add egg and apple juice, beat well. Beat in apples. Gradually add in flour, salt and spices, beating well. Fold in raisins and nuts. Bake on greased cookie sheets for 15 to 20 minutes. Do not overbake. Makes 6 dozen.
