Recipe Found - Cinnamon Popcorn - Healthy and Frugal Snack Idea
Cinnamon Popcorn
Here's a sweet, spicy popcorn treat that kids and adults alike will munch down happily! A great snack for watching movies...Thanks to Sue for sending in this requested recipe.
Makes 4 Servings
Ingredients:
8 cups Popped corn (air-popped)
2 Tablespoons Butter
1/4 Teaspoon Cinnamon, ground
1 Tablespoon Brown sugar
1/4 Teaspoon Vanilla extract
Method:
In small sauce pan, melt butter on low heat until melted.
Add cinnamon, brown sugar, and vanilla to melted butter and stir for 1 minute until well blended.
Drizzle over popcorn, and toss mixture through popcorn until well covered.

Recipe Found (Already!) - for Key Lime Fudge (with No Chocolate)
You Kitchen Crafts 'n' More readers are an impressive bunch. I've already received some of the requested recipes from yesterday's newsletter. This Key Lime fudge recipe was submitted by Cindy, who says it's the one she always uses. It sounds SO good, and so different than the typical chocolate fudge. Enjoy!
Key Lime Fudge
3 cups white chocolate baking pieces
14-ounce can sweetened condensed milk
2 teaspoons finely shredded lime peel
2 tablespoons bottled Key Lime juice or regular lime juice
Line an 8-by-8-by-2-inch or 9-by-9-by-2-inch baking pan with foil, extending foil over the edges of pan. Butter foil; set aside.
Stir baking pieces and sweetened condensed milk in a large heavy saucepan over low heat just until pieces are melted and mixture is smooth. Remove from heat. Stir in lime peel and lime juice. Spread mixture evenly into the prepared pan.
Cover and chill for two hours or until firm. Lift the fudge from pan using edges of foil. Peel off foil and use a knife to cut fudge into pieces. Store in an airtight container at room temperature for up to one week or in the freezer for up to 2 months. Banana Bread

Mom’s best
Makes one loaf
3 very ripe bananas
¾ cup sugar white or brown
large pinch salt
¼ cup butter or margarine
1 tsp soda
1 tbs. water
2 cups flour, unbleached, white, or wheat
(if dough seems too thick, add one or two beaten eggs)
Mix all ingredients together very well. Makes one bread pan size loaf. Put into greased loaf pan and bake at 350 degrees about 45 minutes or until toothpick inserted in center comes out clean. Recipe Request Found - Healthy Breakfast Cookies with Prunes and Beet Sugar
Big thanks to Johanna for finding this recipe, that a reader recently requested! It sounds SOOO good...
Here's a recipe I found on the web in response to the request for healthy cookies with prune and beet sugar. They are called Baker's Breakfast Cookies. This recipe uses brown sugar but I'm not sure if you could substitute beet sugar. Love your website!
BAKER'S BREAKFAST COOKIES
Ingredients:2 cups brown sugar2 1/2 cups rolled oats4 cups all-purpose flour1 tablespoon baking soda1 teaspoon baking powder1 teaspoon salt1 1/2 teaspoon ground cinnamon1/4 cup canola oil1/2 cup prune puree2 tablespoons water5 egg whites1 1/2 teaspoon vanilla extract3/4 cup raisins1/4 cup chopped walnuts1/3 cup chopped dried apricots
Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper. In a large bowl, stir together the oats, flour, baking soda, baking powder, salt and cinnamon. Make a well in the center and pour in the canola oil, prune puree, water, egg whites and vanilla. Mix until well blended. Stir in the raisins, walnuts and apricots. Scoop cookies using an ice cream scoop, or roll into golf ball sized balls. Place cookies 2 inches apart onto the prepared cookie sheets and flatten to 1/2 tall with wet hands. These cookies do not flatten very much while baking. In the preheated oven, bake 8 minutes for chewy cookies 10 to 12 minutes for dry cookies. Cookies will not get crisp. Remove from cookie sheets to cool on wire racks. " These turn out exactly like baker's breakfast cookies! The trick is to underbake them a little bit, and the result is the soft cakey cookie you know and love! "

Recipe Found - Three Different Tried and True Corn Muffin Recipes
Great big thanks to Sue, who always sends in such wonderful recipes when any other reader requests them. Here's an email she sent me, with her three favorite 'tried and true' corn muffin recipes...
Hi Christina:Regarding your request for a corn muffin recipe and favorite dish to serve them with, I alternate the following 3 Southern recipes and I have no special dish that I eat them with. When these muffins come out of the over, I spread honey or butter on them and enjoy their delicious taste. Because I live alone, I will freeze whatever is left over or give them to my kids and their family and my friends.
Recipe #1. CORNY CORN MUFFINS
INGREDIENTS: 1 cup self-rising cornmeal mix, 3/4 cup self-rising flour, 1/2 cup vegetable oil, 1 cup white creamed corn (fresh if possible or frozen), 2 eggs, 1 cup sour cream, 2 tbsp's. sugar.
DIRECTIONS: Preheat oven to 375° and grease a 12-cup muffin tin. (If you like a crispy edge around your muffins, preheat the tin in the oven until the grease is very hot). Combine all ingredients and stir until moistened. Fill the muffin cups with batter and bake for 20 minutes or until golden brown.
YIELDS: 12 muffins.
Recipe #2. CORN MUFFINS
INGREDIENTS: 3/4 cup cornmeal, 1/2 tsp. salt, 3/4 cup boiling water, 1/2 cup milk, 2 eggs beaten, 1 tsp. baking powder, 2 tbsp's. butter melted.
DIRECTIONS: Preheat the oven to 425°F. Sift the cornmeal and salt into a small bowl. Pour in the boiling water and mix well. Add the milk and mix well. Stir in the beaten eggs, baking powder and butter and mix well. Spoon into eight large, nonstick muffin cups. Bake for 20 to 25 minutes or until brown.
YIELDS: 8 servings.
Recipe #3. CORN BREAD or CORN MUFFINS
INGREDIENTS: 2 cups self-rising cornmeal, 1 egg, 1/2 cup buttermilk, 1 tbsp. granulated sugar, 1/4 cup (1/2 stick) butter or margarine softened.DIRECTIONS: Preheat the oven to 350°. In a large mixing bowl, combine the cornmeal, egg, buttermilk, sugar and butter. Mix with whisk
DO NOT BEAT.
FOR CORN BREAD: Pour the batter into a 9 x 12-inch pan coated with shortening or nonstick spray. A prepared iron skillet can be used.
FOR MUFFINS: Pour into 12 to 15 greased or paper-lined muffin cups.
FOR STICKS: Pour into a corn-stick pan coated with shortening or a nonstick spray. Bake for 15 to 18 minutes or until golden brown. Remove from the oven and brush with melted butter. Cut the corn bread into squares OR remove the muffins or sticks from the pan. Serve hot.
MAKES: About 24 servings.
You can get cast iron corn muffin stick pans - that look like miniature cobs of corn. Do any of you have a great, tender corn muffin recipe to share? And if so...what is your favorite dish to serve corn muffins with? I know I love a hot steamy corn muffin with a bowl of spicy chili.
Today's Reader's Question is: How to clean a stainless steel grill?

"My husband just got a new stain less steel grill. SO of course he sprayed the pam grill spray on the cooking surface. Now the question is how do we clean this mess?"

P.S. For Sandy and everyone else -- PAM may seem like a great way to keep your grill and bbq stick-free and easy to clean, but it actually creates a sticky coating on the surface of the grill and any cookware you use it on. It's much better to use a spray bottle with real olive oil inside - light olive oil works best for this application, as it's thinner in consistency and won't clog up the spray bottle. You can use either a regular spray bottle, or purchase one of the aerosol-type bottles at your favorite kitchen shop. (My favorite is by Cuisinart, is stainless steel and allows you to pump air into the bottle which creates pressure for the oil to come out in a nice, steady spray!)Labels: barbecues, BBQ, grilling, helpful hints, readers questions, recipe requests, summertime cooking

Spinach Salad
Easy and delicious especially the dressing!
Ingredients
1 bunch Fresh torn spinach
2 cups Fresh bean sprouts
1 8-oz Can sliced water chestnuts, drained
4 Hard-cooked eggs, chopped
6 Bacon strips, cooked and crumbled
1 Small onion, thinly sliced
Dressing
1/2 cup (packed) brown sugar
1/2 cup Vegetable oil
1/3 cup Vinegar
1/3 cup Ketchup
1 tbsp. Worcestershire sauce
Preparation
In a large bowl, combine spinach, bean sprouts, water chestnuts, eggs, bacon, and onion.
In a bottle or jar, combine all dressing ingredients. Cover and shake well to mix.

Big thanks to Sue B. for finding this healthy Baked Pumpkin Pudding recipe. I think it would be delicious warm with a dollop of low-fat vanilla ice cream or frozen yogurt.
BAKED PUMPKIN PUDDING
Prep. Time: 10 minutes
Total Time: 55 minutes
INGREDIENTS: 1/2 cup egg substitute, 2 cups cooked pumpkin or canned pumpkin, 3/4 cup sugar, 1 tsp. ground cinnamon, 1 tbsp. honey, 1/2 tsp. ground ginger, 1/4 tsp. ground cloves, 1 1/2 cups fat-free evaporated milk, 5 tbsp's. light whipped topping.
DIRECTIONS: 1. Preheat oven to 425°. In a medium mixing bowl, beat the egg substitute, pumpkin, sugar, honey and spices until blended. Slowly add milk and continue to blend. Pour into five eight-ounce custard cups that are coated with nonstick cooking spray. Place in a 15 x 10 x 1-inch baking pan. 2. Bake pudding uncovered for 10 minutes. Reduce heat to 350° and continue to bake for 30-35 minutes until knife inserted near the center comes out clean. You can serve this dessert warm or cold. Eggnog Bread (with Cake Consistency) - Readers Requested Recipes Found
This is a delicious Eggnog Bread recipe I have made several times. It is very tender and cake-like.

Eggnog Bread
1/2 cup butter
1 cup sugar
2 eggs
1 cup eggnog
2 Tablespoons rum
2-1/4 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
Beat butter and sugar until light and fluffy. Add eggsand rum and beat light and fluffy again. In anotherbowl, stir together the cake flour, baking powder, salt and nutmeg. Add to creamed mixture. Mix until thoroughly blended. Pour into a greased and floured large loaf pan. Bake 350 degrees until center tests done. Cool slightly, then remove from pan and cool completely.
