Big thanks to Bev for sending in these recipes using spelt flour!

SPELT Muffins
2 1/4 cups SPELT flour
1 1/4 cup milk or milk substitute
1/4 cup sugar or honey
3 eggs, beaten
1 Tablespoon alum-free baking powder
1 Tablespoon oil
1/2 teaspoon seasalt, if desired
Combine all dry ingredients. Add milk, eggs, oil. Mix. Fill muffin
cups, greased or papered. Bake for about 17 minutes, or until browned,
in a 375 degree oven.
VARIATIONS: Add 1/2 cup chopped almonds, OR 1/2 cup chopped dates,
OR raisins, etc.

SPELT Buttermilk Biscuits
2 cups SPELT flour
1 tablespoon aluminum-free baking powder
1/4 teaspoon salt
1 cup buttermilk
Preheat oven to 425 degrees F. Grease baking sheet. Combine all
dry ingredients and add buttermilk until just blended. Drop batter by heaping
spoonfuls onto baking sheet. Bake for 12-15 minutes, or until lightly
browned. Yield: 12 biscuits.
SPELT Pie Crust 3 Tablespoons oil
2 Tablespoons cool water
1/4 teaspoon seasalt, if desired
1 cup + 2 Tablespoons SPELT flour
Whisk oil, water and seasalt together. Stir in the flour and mix until
evenly moistened. Press i nto a 9 inch pieplate. Fill and bake as required
for the fillinf. OR bake the empty crust for 12 minutes
at 375 degrees F and fill when cool.

SPELT Pancakes, Thin Style
1 cup SPELT flour
1 egg, beaten
1 teaspoon alum-free baking powder
1 cup milk or milk substitute
1 Tablespoon brown sugar or maple syrup
3 Tablespoons oil
Beat ingredients together. Let batter stand for a while before frying,
the longer the better. Lightly oil a frying pan, fry one side till bubbles
appear, then turn.

SPELT Pancakes
2 cups SPELT flour
2 tablespoons aluminum-free baking powder
1/2 teaspoon salt
1 3/4 cups water or 2 cups nutmilk (see below)
1 egg (optional)
1 teaspoon maple syrup (optional)
3 tablespoons oil
Whisk together dry ingredients in a medium bowl. In a smaller
bowl whisk togerher the liquids. ( If you are making nutmilk, work in a
blender: grind 1/2 cup raw cashews or other nuts to a fine powder, add
water to make 2 cups, then add egg, maple syrup and oil. Whiz briefly to
blend.) Pre-heat griddle. When a drop of water 'dances' on it, pour liquids
over flour mixture and stir to moisten. Oil griddle. Spoon batter onto
griddle in 4 to 6" cakes. Turn when top side is thoroughly bubbled. Serve
immediately.

SPELT Banana Bread
1/2 cup soft butter
1 cup or less brown sugar
2 eggs, beaten
2 cups SPELT flour
1 teaspoon aluminum-free baking soda
1/2 or less teaspoon of salt
2 or 3 ripe bananas, mashed
1/2 cup chopped almonds (optional)
Pre-heat oven to 350 degrees F. Cream butter and sugar;
add eggs and beat well. Add dry ingredients and finally bananas
and nuts. Mix well. Bake in three 3x5 " loaf pans or in one
5x9" loaf pan, well-greased. Bake for one hour or until toothpick
comes out clean.

Cheap Dog Toys Idea - Submitted by a Reader

This is in "answer" to Tina D. from Texas: Our dog (Beagle/Basset) loves stuffed toys whether they squeek or not, the bigger the better. She likes the ones that are as big as she is. I ran across a goldmine of cheap stuffed animals at the GOODWILL (better deal than even WalMart)! We love to watch our Mitzi try and try to get the non-squeeking ones to squeek! Ha. She eventually tears her toys up over time, but usually uses them as a security blanket. She gets so excited when it is time to put her leash on to go walking, that she runs frantically around to find a toy to hold in her mouth, so that she can sit quietly long enough for the leash to be fastened. She came up with that solution herself, otherwise we would never have been able to rein in that uncontrollable joy!

A new use for Epsom Salts - Use when washing lace curtains

Cute Baby Shower Game -- Name that Baby Food

In one of our recent newsletters a reader asked about fun baby shower games. Here's a new idea sent in to me by a reader:

I just had a baby shower for my daughter with a bunch of women who hate games. So I made it fun and simple and did the baby food game.
I purchased several jars of baby food (single ingredient work best) and removed the lables. I placed 3 jars on each table and numbered the lids with sharpie markers. The women received a paper numbered 1-15 when they arrived.
In order to WIN the game, they had to get up and walk around (causing them to mingle with folks they did not know-many made some new friends) They were not allowed to open the jars to taste or smell, just to look at the jar and check color and consistency. The person who got the most right, won a great big gift basket filled with scrapbooking supplies.
This had to be the best game my friends and family ever did at a shower. They really had fun.

The Easiest Way to Sterilize Canning Jars - Using the Dishwasher

Here was a recent question from one of our KCnM newsletters, and the answer from Sandy!

"What is the easiest way to can fruits and veggies foruse over the winter? I've heard that you can use thedishwasher somehow to get your canning jarssterilized...is that true??"

I have been using my dish washer for 20 years to clean and sterilize my canning jars. Keeps them nice and warm while waiting for what ever it is I select to can. I do suggest buying a pressure cooker. I just purchased a new larger one which holds 19 quarts. WOW what a difference! It's worth every penny. The time was more than cut in half.So boil the lids for a minute and wipe the tops of the jars clean before using the lids with the screw tops.
