Saturday, July 14, 2007 Ziploc Baggie Fudge Recipe - Great Summertime Fudge (Fun for Kids)

Ziploc Fudge
Thanks go to Jeannie for this fun, heat-free summertime candy project. Wow, does it ever sound good!

1 stick butter or margarine (or 1/2c. peanut butter)
1 tsp vanilla
4 oz. cream cheese
2/3c. unsweetened cocoa powder
1lb. powdered sugar

Cover a paper plate with foil and set aside. (I didn't do this, I just left it in the ziplock.) Place butter (or peanut butter), cream cheese and vanilla in a large Ziplock bag, seal the bag and squish it until the ingredients are combined (about 5 minutes). Add the cocoa and powdered sugar and continue squishing the bag until everything is well mixed (5 - 10 minutes). Empty the bag onto the foil-wrapped plate. ( I left mine in the bag ). Let stand for a few minutes to solidify. Cut into cubes and enjoy!!! Refrigerate leftovers!!

Something else that you can do is buy the unsweetened baking squares (a box of eight 1 oz. squares is $2-3), melt it down, sweeten with splenda or stevia, and then add little bits of milk or cream until it reaches the consistency you want. (You'd use more milk for a sauce - like for ice cream topping - and less milk if you want to use it as a chocolate coating.)

Today's Reader Question of the Day is from: Helen F
who asks:

"I am diabetic and would like to make my own sugar free chocolate candy. The purchased candy is so expensive. Can I use the chocolate chips in the bag to cover nuts, pretzels, etc. or is there a special chocolate I should use. If there is such a thing as sugar free chocolate coating, where can it be purchased as I have never seen it. I have tried asking this question to several sources and no one seems to be able to give me an answer so I am going to the "experts".
