Honey Recipes - from the National Honey Board - a Wonderful Gift made with Honey - Hot Pepper Honey
Spice up that Honey, honey!
Hot Pepper Infused Honey recipe
(from the US National Honey Board)
1 cup honey
1-1/2 teaspoons red pepper, dried and crushed
Directions
Place honey and red pepper in a double boiler with water in bottom. Bring water to a boil, and bring honey to 185°F and keep at 185°F for 10 minutes. Remove from heat and let stand 10 minutes. Today's Ingredient is...Honey! Making Jams and Jellies with Honey instead of Sugar
Found a great tip for using honey instead of refined white sugar in your jams and jellies. (Found this on the brockvillefarmersmarket.ca website - fantastic tips for local produce!)
Jams and Jellies with Honey
Honey may be substituted for sugar in most jam and jelly recipes. If a recipe calls for four cups of sugar, use two cups of honey. Cook the jam or jelly slightly longer than the time stated in recipe using sugar. When honey is used, always use a commercial liquid or powdered pectin.
The consistency of the jam or jelly will be somewhat softer.Labels: honey, jams, jellies, no white sugar
