Easy Healthy Mixed Berry Sauce/Compote
Making a simple, delicious and healthy berry sauce is only a few minutes away - thanks to the microwave! I make this sauce all the time, and it's one of the easiest 'recipes' you'll ever find. Use this delicious blend to top ice cream, yogurt, pancakes or waffles.
Easy Healthy Mixed Berry Sauce
- About 2 cups of frozen mixed berries (The kind I get usually contains strawberries, raspberries, blueberries and blackberries)
- About 2 teaspoons of honey (more or less to taste)
- 1/2 teaspoon vanilla extract
In a microwave safe container (I use a Pyrex measuring cup), pour in the mixed berries. Add a healthy squirt of natural honey, and mix. Microwave for 2-4 minutes, until the berries are warmed through. Add the vanilla extract and stir.

Delicious, Refreshing Summertime Drink - Blackberry Limeade
Blackberry Limeade Recipe
This sounded so good to me. I think I would make one change to it -- I'd replace the water with seltzer! Make it Sparkling! (From Dorina)
Blackberry Limeade
6 cups water, divided (or take Dorina's suggestion and make it sparkle!)
3 cups fresh blackberries
1 cup sugar
2/3 cup fresh lime juice (about 4 limes)
8 thin lime slices
Fresh blackberries (optional)
Place 1 cup water and 3 cups blackberries in a blender. Process until smooth. Press blackberry puree through a sieve into a large pitcher. Discard seeds. Add remaining 5 cups water, sugar, and lime juice to pitcher. Stir until sugar dissolves. Place 1 lime slice and a few blackberries, if desired, into each of 8 glasses. Pour about 1 cup limeade over each serving.Makes 8 servings. Per serving: 125 calories (2 percent from fat), 0.3 grams of fat (0 grams saturated, 0 grams monounsaturated, 0.2 grams polyunsaturated), 0.4 milligrams of iron, 0 milligrams of cholesterol, 22 milligrams of calcium, 31.9 grams of carbohydrates, 5 milligrams of sodium, 0.8 grams of protein, 0.7 grams of fiber.
