EASY EGGNOG BREAD
And here's our second submitted eggnog bread recipe. Thanks to Sue for sending it in to me! It sounds delish - more like an eggnoggy fruitcake.
INGREDIENTS: 1/2 cup melted butter, 1 1/2 cups sugar, 4 eggs beaten, 2 cups eggnog, 4 1/2 cups all-purpose flour, 4 tsp's. baking powder, 2 tsp's. salt, 1 cup chopped pecans, 1 cup chopped cherries, 1 cup raisins, 1 cup dates.
DIRECTIONS: Preheat the oven to 350°. In a large mixing bowl, using a fork, blend the butter anf sugar together. Stir in the eggs then gradually stir in the eggnog. Mix well. In a separate bowl, combine the flour, baking powder and salt. Gradually add the dry mixture to the eggnog mixture (DO NOT use an electric beater). Fold in the pecans, cherries, raisins and dates. Fill loaf pans three-fourth full or 6 small 6 x 3 1/2 x 2-inch pans or one 9 x 5 x-inch pan. Bake for 25 minutes.Labels: dates, easy baking, eggnog, eggnog bread
