Free Recipes - Creole Corn Casserole
Creole Corn Casserole Recipe
Thanks to Dorina for this delicious sounding recipe!
INGREDIENTS:
3 tablespoons bacon drippings or butter
1/3 cup flour
1 can (about 12 ounces) corn, drained
1 can (14.5 ounces) tomatoes, drained
1 small onion, chopped
1 rib celery, finely chopped
4 ounces grated cheese
salt and pepper
PREPARATION:
Heat drippings. Add flour and cook, stirring constantly, until light brown. Add corn, tomatoes, celery, and onion. Mix well and remove from heat. Make layers in 2 quart casserole, alternating vegetables and grated cheese.

Old Fashioned Corn Pudding Recipe - a Great Way to Use Fresh Corn
Corn Pudding Recipe

I think it would be a wonderful way to use up some fresh corn...delicious! And makes an interesting and unique side dish.
1/2 cup flour
1 teaspoon salt
4 teaspoons sugar
3 tablespoons butter, melted
2 cups whole kernel corn
4 large eggs
4 cups milk
In a lightly buttered casserole dish, combine flour, salt, and sugar; mix in corn and butter. Beat eggs and add to milk. Stir into the corn mixture. Preheat oven to 450°.Place in oven for 10 minutes.
