Dinner Recipe: Taco Chicken in the Crockpot
Taco Chicken in the Crockpot Submitted by Christi
1 package taco seasoning (or approximately 1.5-2 tbsp homemade mix) 4-8 boneless skinless chicken breasts 1/2 cup water flour or corn tortillas or taco shells usual taco condiments: tomatoes, lettuce, cheese, onions, guacamole, salsa, etc.
Mix taco seasoning with water. Place chicken in Crockpot and pour seasoning over top. Toss together to coat well. Turn Crockpot on low and let cook for 6-8 hours. When done, the chicken will fall apart easily when trying to shred. At this point, shred chicken (two forks work well for this work and can be done right inside the pot) and let cook another 20-30 minutes to absorb some of the juice in the pan. Serve as you would any tacos. This dish also freezes quite well. Just make up the chicken as directed and place in freezer bags. To reheat, just pop in the microwave and you're done.
