Asian Cole Slaw Recipe

1/2 head cabbage, cored and shredded
1 Tbs (15 ml) salt

2 carrots, shredded
1 cup rice wine vinegar
2 Tbs finely chopped ginger
1/2 cup sugar
1 tsp red pepper flakes

Toss the cabbage and salt together in a colander. Place a plate on top of the cabbage and weigh it down with a couple of cans.

Let drain at room temperature for at least 3 hours. Rinse and drain thoroughly. Combine with the remaining ingredients in a large bowl and toss to combine and dissolve the sugar.

Cover and refrigerate overnight.
Serves 4.
