Thursday, July 27, 2006 Shrimpy Rice Salad - Another Great No-Cook Meal for Summer

Shrimpy Rice Salad

Ingredients :
1 cup long grain white rice
2 cups boiling water
1/2 cup sliced pimiento-stuffed olives
1/3 cup chopped celery
1/4 cup slivered/chopped green pepper
1/4 cup chopped pimiento
1/4 cup finely chopped red onion
1 cup cooked shrimp (or crabmeat), canned, fresh/frozen, thawed
3 tbsp low-fat salad dressing (or mayonnaise)
1 tbsp milk
1 tsp. lemon juice
1/2 both salt/pepper

Instructions :
1) Cook rice in boiling water for about 15 minutes until tender and
liquid is absorbed. Turn into bowl. Cool.

2) Add next 6 ingredients. Stir.

3) Mix salad dressing, milk, lemon juice, salt and pepper in small bowl.
Add to rice mixture. Stir well. Drizzle with french dressing (optional)
over just before serving.

Makes 8-1/2 cups salad.
