Cashew and Caramel Squares - Baking Squares Bars Recipes
From my Aunt Diane - who's an AMAZING BAKER! :)
these are yummy!!!! they need to be kept cold though or they get awfully gooey. They are kind of fiddly but not too bad. 2 1/2 c. icing sugar 7 oz. jar Fluff 1/2 c. crushed Oreos 1/2 c. salted cashew pieces 1/3 c. melted butter 36 caramels 3T cream (I used milk) 1 c. semi-sweet chocolate chips 1/4 c. peanut butter Combine icing sugar and Fluff. Mix (use your hands) and then knead until smooth. Roll out to 8" square. Wrap in plastic wrap and set aside. Line 8" square pan with foil. In small bowl combine cookie crumbs 1/2 c. cashews and melted butter. Blend well. Press into pan and bake at 350 for 8-10 minutes. Immediately unwrap Fluff mixture and place on hot crust. Combine caramels and cream in medium bowl & microwave on med. 4-6 minutes. Stir twice during cooking. blend until smooth. Add 1 c. cashews & mix. Spread over Fluff layer. In small bowl combine choc. chips and peanut butter. Melt in microwave on med. 2 minutes. Stir. Pour over caramel layer. Refrigerate.
