Another Cornmeal Cookies Recipe - Recipe Lost and Found
This recipe is for Terri who was requesting the recipe for Cornmeal Cookies. I have a Cooperative Extention Cookbook from the 60's that my mother gave me many years ago. I have made many recipes from it, but have never tried the cornmeal cookie recipe. I hope this is the one you are looking for.

Cornmeal Cookies
1/2 cup shortening 1/2 cup sugar 1/2 teaspoon vanilla extract 1 egg 1 1/2 cups flour 1/2 cup cornmeal 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon nutmeg
Cream shortening; add sugar gradually and cream well. Beat in egg until light and fluffy. Add vanilla. Sift remaining ingredients together and add to the creamed mixture; mix thoroughly. Shape dough into rolls and chill in refrigerato 2 hours or overnight. Cut cookies off roll and bake at 400° for about 6 minutes or until cookies are lightly browned. Do not overcook.
The recipe doesn't say how many it makes.
