EASY EGGNOG BREAD
And here's our second submitted eggnog bread recipe. Thanks to Sue for sending it in to me! It sounds delish - more like an eggnoggy fruitcake.

INGREDIENTS: 1/2 cup melted butter, 1 1/2 cups sugar, 4 eggs beaten, 2 cups eggnog, 4 1/2 cups all-purpose flour, 4 tsp's. baking powder, 2 tsp's. salt, 1 cup chopped pecans, 1 cup chopped cherries, 1 cup raisins, 1 cup dates.

DIRECTIONS: Preheat the oven to 350°. In a large mixing bowl, using a fork, blend the butter anf sugar together. Stir in the eggs then gradually stir in the eggnog. Mix well. In a separate bowl, combine the flour, baking powder and salt. Gradually add the dry mixture to the eggnog mixture (DO NOT use an electric beater). Fold in the pecans, cherries, raisins and dates. Fill loaf pans three-fourth full or 6 small 6 x 3 1/2 x 2-inch pans or one 9 x 5 x-inch pan. Bake for 25 minutes.

EGGNOG BREAD RECIPE

Here is an easy eggnog bread recipe that's very good.

2 eggs
1 cup sugar
1 cup eggnog
1/2 cup butter
1/4 tsp. nutmeg
2 tsp. rum extract
1/4 tsp. vanilla
2 1/4 cups flour
2 tsp. baking powder

Preheat oven to 350 degrees. Grease bottom of bread pan. Beat eggs, add sugar, eggnog, butter,rum extract and vanilla. Blend well, add flour, baking powderand nutmeg. Stir until just moistened. Pour into greased pan. Bake at 350 for 45-50 min., or until toothpick comes out clean. Cool 10 minutes, remove bread from pan. Cool bread completely before slicing.

Toaster Oven Recipes - Grilled Steak with Peppercorns

Big thanks to Collette for sending in this delicious, simple toaster oven recipe!

Grilled Steak With Cracked Peppercorns

2 servings
4 teaspoons black or mixed peppercorns
1 to 2 teaspoons coarse salt
2 porterhouse steaks or other cut of choice
2 tablespoons extra-virgin olive oil
2 lemon wedges (optional)

Preheat the toaster oven to broil. For easy clean-up, lineoaster oven baking tray with aluminum foil. (Check your manufacturer's instructions, however, for any cautions against use of aluminum foil in your toaster oven.)

Crush the peppercorns and salt in a mortar using a pestle. Or if you don't have a mortar and pestle, toss the peppercorns and salt into a sealable plastic bag and crush with a rolling pin or a wine bottle.

Rub both sides of the steak with the olive oil and press the peppercorn mixture into the steaks. Place the steak on the prepared tray. Broil for about 7 to 10 minutes on each side, until the meat reaches medium doneness. (Time may vary depending on thickness of steak.) Remove from oven, transfer to plates, and serve immediately with lemon.

Italian Bread Dipping Oil Recipe - Make Your Own

Italian Dipping Oil (for Bread)

1/2 cup olive oil
1/4 cup fresh basil, washed,dried and chopped
4 cloves garlic, minced
1/8 teaspoon black pepper

1. Pour olive oil into a shallow bowl.
2. Add basil, garlic and pepper.
3. Stir with a spoon to evenly distribute ingredients.
4. Serve with warm bread.
5. ~NOTE~Use a good quality olive oil and fresh basil and garlic for best results.
6. More garlic can be added if desired.

Serves 16
1 Pound Cream cheese- softened
2 ounces unsweetened chocolate-melted and cooled
1/2 cup Splenda
1 teaspoon vanilla extract
1/2 cup chopped pecans

In a small mixing bowl, beat the cream cheese, chocolate, sweetener andvanilla until smooth. Stir in the pecans. Pour into 8 inch square baking pan lined with foil.Cover and refrigerate overnight. Cut into 16 squares.

Jack's Homemade Pepper Jelly - Gift in a Jar

JACK'S HOMEMADE PEPPER JELLY
Big thanks to Shannon!

We like this on anything, but we really like it over softened Philly
cream cheese and some crackers. As one of my co-workers put it, it's
like crack on a cracker. You really can't stop eating it!

You'll need:

Apprx 11 ½ pint widemouth jars

Ingredients

1 box Certo

6-1/2 cups sugar

1-1/2 cups Apple Cider Vinegar

2-3/4 cups chopped peppers (3/4 cup being Jalapeno peppers, which is
about 6-7 medium peppers. The Rest is approximately 2 Green, 2 Red,
and 1 Purple sweet pepper.

Put 1 tablespoon of the Jalapeno seeds in with the peppers.

Take all ingredients, mix in pot and Bring to a Roiling Boil. ( Stir
constantly the whole time )

Add 1 package of Certo, then bring back to a boil,

Boil for 1 minute, then turn off heat.

Ladle the hot liquid into jars, wipe off rims (or use a funnel if you
have one) and put canning lids on. Fill only 7/8 full.

When all Jars are filled, turn jars upside down for 5 minutes.

Turn jars back up, and let set for several hours, you will hear jars
popping and sealing during this time.

Night Night Cinnamon Buns - Make them at Night and They're Ready in the Morning!

Night Night Cinnamon Buns

I think this sounds soooo cool....really gonna give this a try....lovecooking in my sleep..!! (hehe, Me too Pat!)

20 Frozen Dough Rolls
1 cup Brown Sugar
1/4 cup Vanilla Instant Pudding
1 tablespoonCinnamon (up to 2 Tbsp)
1/4 cup Raisins, (Plumped)
1/4cup Butter, Melted (up to 1/2 C)
Before you put the cat out and turn off the lights, grease a 10" Bundt Pan and add the frozen rolls. Mix the brown sugar, dry pudding powderand cinnamon. Sprinkle over the rolls. Sprinkle the plumped raisinsontop. Pour the melted butter or margarine over all. Cover with a clean,damp cloth. (Leave out at room temperature). Turn out the lights and sayGood Night. In the morning preheat the oven to 350F and bake for 25 minutes. Letsit for 5 minutes and then turn out on a serving plate. Now Enjoy!

Free Recipes - Almond and Honey Coffee Cake

Almond & Honey Coffee Cake

Cake ingredients:
1/2 cup ricotta cheese
4 tablespoons milk
4 tablespoons vegetable oil
1/4 cup sugar
Dash of salt
2 teaspoons baking powder
1-1/2 cups flour

Topping:
5 tablespoons butter
1/4 cup sugar
1/3 cup honey
1 cup sliced almonds
1 teaspoon vanilla

In a large bowl, combine cheese, milk, oil, sugar and salt. Sift baking powder with flour and add to cheese mixture. Stir well and then knead lightly for about 5 minutes to form a smooth ball. Set aside for 10 minutes.Melt butter in a heavy saucepan. Add sugar and honey and stir constantly over medium heat until mixture is thick and coats a wooden spoon. Add almonds. Remove from heat and add vanilla. Preheat oven to 350 degrees. Grease the bottom and sides of a 9-inch springform pan. Place dough in pan and spread topping evenly over all. Bake for 25 to 30 minutes, making sure topping does not get too brown. Cool for 5 minutes, then remove sides of pan. Serve warm.Yields: 1 coffee cake

Homemade Gifts for Cats - Reader's Ideas

Here's an idea I received from one of our newsletter subscribers, on an easy gift to make for your (or someone else's) pet kitty cat!

Gifts for my cats:I find that most fancy toys that I get for my cats from the store completly bore them. Little balls and fuzzy mice entertain them but their favorite toy is one that I made for them. All you need to do is wrap a small piece of felt around a tiny jingle bell and tie it off with a few pieces of dangling yarn. My cats go crazy for this thing. Try it, maybe yours will like it too!
